I know what you mean when you say after meeting someone in one laguage it's hard to change. I meet my wife in english and even though my french has improved now it took a long time before she would speak to me in french and I still find it very hard to speak to her in french even though I have no problem speak to everyone else in french. We even tried the "lets speak french in the morning thing". Never worked.
We have 3 young children. I speak only english to them but they always reply in french, we don't see the point in push too hard an figure they will speak english when they feel they need to. The 4 year old thinks speaking english is speaking french with a posh english accent.

Very interesting episode.
And I really understand how strange and difficult it is switch language. I can't speak french with my father although it would really be easier for me now, so it's not a question of fluency or sence of humor.
In my childhood I met some multilingual families who are trying to teach as many languages to the kid as they could. They were many strategies, like one parent one language as it was in mine, but had one day one language.
You would be speaking french on week days but english on week-end.
I don't know how it really worked in the end.
